Break 6 eggs into a bowl and beat together with about a half cup of milk. Put a couple dashes of cinnamon in the bowl and stir well. Heat a non-stick electric griddle to 350 degrees. Dip a slice of bread into the egg mixture, quickly turn over to coat both sides, then remove from egg mixture and allow excess to drip off for a couple seconds. The bread should be well-coated but not super-saturated. Place on griddle. Repeat until griddle is full. Allow them to cook for about a minute, then start checking the one you put on first. If the edges appear to be cooked, gently insert a spatula underneath and flip it over. Repeat with the rest of the slices. Allow them to cook for another couple minutes, then remove from griddle and serve with butter and syrup or fruit.
